Can anyone help? The non-dialogue subtitles are all in one place and they're impossible to read. I've tried looking up for something like this, but I can't find any results (and also I don't really know how to look it up properly)

I think you are true eager to put the blame on vlc, I have related problems with mxplayer on my android beelink. I have not checked ember yet, but A.T. gives just blank white on non-d. subtitles ON SOME SCENES, there are subtitles that show just ok. And some of the faulty ones give a frame or two long flicker of something but end up blank. Oh yeah, sorry can't help (this got all backwards with questions and answers :) ).
Some additional info...
mpv showed subs correctly, mxplayer came to senses with re-install, haven't had that good results with android vlc before so it is not installed {no test results}
I would suggest re-install after re-boot if needed, might even get fixed with that
